Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan.
In a bowl, mix graham cracker crumbs and melted butter. Press into the bottom of the pan to form the crust.
Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing on low after each. Stir in vanilla.
Pour the batter over the crust, then spoon apple pie filling evenly on top.
For the crumble, mix flour, brown sugar, butter, and cinnamon until crumbly. Sprinkle over the apples.
Bake for 55–60 minutes or until the center is almost set. Cool completely before refrigerating for at least 4 hours.
