Ingredients

  • 1 pound fresh salmon fillet, skin removed
  • 1 cup breadcrumbs
  • 1 large egg
  • 2 green onions, finely chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 ripe avocado
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon lime juice
  • 1/4 teaspoon cayenne pepper
  • Salt to taste

Instructions

  1. Preheat oven to 375°F. Line a baking sheet with parchment paper.
  2. Chop salmon finely or pulse in a food processor until coarsely ground.
  3. In a bowl, mix salmon with breadcrumbs, egg, green onions, lemon juice, garlic powder, salt, and pepper.
