Baked Salmon Recipes with Coconut Curry Baked Cod

Sometimes dinner feels like a gamble, doesn’t it? You’re staring into the fridge, wondering how on earth to turn a couple of fillets and a jar of curry paste into something people will actually want to eat. That’s where this Coconut Curry Baked Cod saves the day. It’s simple, hearty, and carries a warm, spiced aroma that sneaks out of the oven and fills the whole house. And yes, while we’re calling it baked cod, it plays well with baked salmon recipes too, so you’re free to switch it up if that’s what’s sitting in your freezer. When I first made this dish, I was skeptical. Cod isn’t the flashiest fish on the block—it’s more like the quiet neighbor who suddenly throws an amazing backyard barbecue. With the right coconut curry sauce, though, it transforms into something bright and rich. It’s one of those cod recipes baked with just the right balance: tender fish tucked under a creamy, fragrant blanket that makes you wonder why you haven’t been making baked cod recipes all along. What I love most is how forgiving it is. You don’t need to fuss with complicated steps or dozens of spices. A handful of pantry staples do the trick, and before you know it, you’ve got one of those recipes baked to comfort-food perfection. Whether you’re trying cod fish recipes baked for the first time or revisiting an old favorite, this one earns its spot on repeat.
