Heat a skillet over medium heat and melt the butter.
Pour in the beaten eggs and scramble until just set. Remove from pan and set aside.
Place one tortilla in the skillet. Sprinkle half the cheese evenly over it.
Add the scrambled eggs on top, followed by the rest of the cheese.
Place the second tortilla on top and cook until the bottom tortilla is golden and the cheese begins to melt.
Flip carefully and cook the other side until golden brown and cheese is fully melted.
Slice into wedges and serve with salsa or hot sauce.
