Heat olive oil in a large pot over medium heat. Add chicken, salt, and pepper. Cook until browned.
Add onion and garlic. Stir until fragrant and softened.
Mix in zucchini and red bell pepper. Cook a few minutes until slightly tender.
Stir in orzo, chicken broth, oregano, and paprika. Bring to a boil, then reduce heat to low.
Cover and simmer about 12 minutes until orzo is cooked and liquid is mostly absorbed.
Remove from heat, stir in parmesan and parsley, then serve warm.
