Ingredients

  • 2 cups cooked rice
  • 2 tablespoons olive oil
  • 1 pound chicken breast, cut into bite-sized pieces
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 cup chicken broth
  • 3 tablespoons soy sauce
  • 1 tablespoon honey
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chicken pieces and cook until golden and no longer pink in the center.
  3. Stir in onion, garlic, and red bell pepper. Cook until softened.
  4. Add pineapple chunks and let them caramelize slightly.
  5. Pour in chicken broth, soy sauce, and honey. Stir well.
  6. Simmer for 5 to 7 minutes until the sauce thickens.
  7. Season with salt and pepper to taste.
  8. Serve over cooked rice and garnish with fresh cilantro if desired.
