Ingredients

  • 1 lb chicken sausage, sliced
  • 1 cup long-grain rice, rinsed
  • 1 onion, diced
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 can diced tomatoes (14.5 oz)
  • 2 tbsp olive oil
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken sausage and cook until browned on the edges.
  3. Stir in onion, bell pepper, and garlic. Cook until softened.
  4. Add rice, paprika, salt, and pepper. Stir to coat the rice with spices.
  5. Pour in chicken broth and diced tomatoes. Stir and bring to a boil.
  6. Lower heat, cover, and simmer for 20 minutes until rice is tender and liquid absorbed.
  7. Fluff with a fork and garnish with fresh parsley before serving.
