Ingredients

  • 1 lb Italian chicken sausage, sliced
  • 1 cup long-grain white rice
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1/2 cup tomato sauce
  • 1/2 tsp dried oregano
  • Salt and black pepper to taste
  • Grated Parmesan and chopped parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chicken sausage and cook until browned on both sides.
  3. Stir in chopped onion and minced garlic; sauté until softened.
  4. Add rice, chicken broth, tomato sauce, oregano, salt, and pepper.
  5. Bring to a simmer, cover, and cook for 18–20 minutes until rice is tender.
  6. Fluff with a fork, top with Parmesan and parsley, and serve warm.
