Ingredients

For the Broth and Noodles

  • 4 cups chicken stock or vegetable stock
  • 2 tablespoons low sodium soy sauce
  • 1 teaspoon toasted sesame oil
  • 2 cloves garlic minced
  • 1 tablespoon grated fresh ginger
  • 2 packages instant ramen noodles discard seasoning packets
  • 12 frozen dumplings any filling

Vegetables and Toppings

  • 2 baby bok choy trimmed and halved
  • 1 cup sliced mushrooms
  • 3 scallions thinly sliced
  • 2 large eggs soft boiled optional
  • 1 teaspoon chili crisp or chili oil optional
  • 1 teaspoon sesame seeds

Instructions

Make the Broth

  1. Set a medium pot over medium heat and pour in the stock
  2. Stir in soy sauce sesame oil garlic and ginger and bring to a gentle simmer

Cook Noodles and Dumplings

  1. Add dumplings and cook until they float and feel tender about 6 to 8 minutes
  2. Drop in ramen noodles and cook until just springy about 2 to 3 minutes

Finish the Bowl

  1. Add bok choy and mushrooms and cook one minute so the greens stay bright
  2. Ladle noodles broth and dumplings into warm bowls
  3. Top with scallions eggs if using chili crisp and sesame seeds
