Ingredients

  • 1 tablespoon olive oil
  • 1 pound Italian chicken sausage, sliced
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 1 1/2 cups orzo pasta
  • 4 cups chicken broth
  • 1/2 cup heavy cream
  • 1 cup fresh spinach
  • 1/2 cup grated parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chicken sausage and cook until browned.
  3. Stir in onion and garlic, sauté until fragrant.
  4. Add orzo and stir for 1 minute to coat with flavors.
  5. Pour in chicken broth, bring to a boil, then reduce to simmer until orzo is tender.
  6. Stir in heavy cream, spinach, and parmesan. Cook until creamy and spinach is wilted.
  7. Season with salt and pepper and serve warm.
