Ingredients

  • 12 ounces spaghetti or linguine
  • 1 can (28 ounces) crushed tomatoes
  • 1 medium onion, thinly sliced
  • 4 cloves garlic, thinly sliced
  • 4 1/2 cups vegetable broth
  • 2 teaspoons dried oregano
  • 1/2 teaspoon red pepper flakes
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • Fresh basil leaves, for garnish

Instructions

  1. Place pasta, tomatoes, onion, garlic, broth, oregano, red pepper flakes, olive oil, salt, and pepper in a large pot.
  2. Bring to a boil over high heat.
  3. Reduce heat to medium and cook, stirring occasionally, until pasta is al dente and liquid has mostly evaporated, about 9 to 12 minutes.
  4. Divide among bowls and top with fresh basil and Parmesan.
