Chop the onion and mince the garlic then cut broccoli into bite size florets.
Warm olive oil in a large skillet on medium heat then add onion and cook until translucent about 3 to 4 minutes. Stir in garlic.
Move onion to the side then add ground beef. Break it up and cook until browned about 5 to 7 minutes.
Stir in broccoli with a pinch of salt and pepper. Cook until the florets brighten and turn tender crisp about 4 to 5 minutes.
Scatter cheddar over the top. Cover the skillet and let the cheese melt about 2 to 3 minutes.
Taste adjust seasoning and serve hot from the pan.
