Ingredients

  • 1 pound ground beef
  • 1 medium zucchini, chopped
  • 2 medium sweet potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add ground beef and cook until browned, breaking it apart with a spoon.
  3. Stir in onion, garlic, and bell pepper. Cook until softened.
  4. Add zucchini and sweet potatoes. Season with paprika, oregano, salt, and pepper.
  5. Cover the skillet and cook until the sweet potatoes are tender, about 15 minutes. Stir occasionally.
  6. Taste and adjust seasoning as needed.
  7. Garnish with fresh parsley before serving.
