Ingredients

  • 1 lb ground turkey
  • 4 medium potatoes, diced
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
  • 1/4 cup fresh parsley, chopped
  • Optional 1/4 teaspoon red chili flakes

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and garlic and cook 2 to 3 minutes until fragrant.
  3. Stir in potatoes and bell pepper and cook about 10 minutes, stirring now and then.
  4. Push vegetables to one side and add ground turkey. Cook until browned and cooked through, breaking it up.
  5. Season with smoked paprika, thyme, salt, pepper, and chili flakes if using. Stir everything and cook 5 to 7 minutes until potatoes turn tender.
  6. Remove from heat and fold in parsley. Serve hot.
