Ingredients

  • 4 large spinach tortillas or wraps
  • 1 cup hummus (store-bought or homemade)
  • 1 red bell pepper, thinly sliced
  • 1 cucumber, thinly sliced into sticks
  • 1 carrot, peeled and julienned
  • 1/2 cup shredded red cabbage
  • 1/2 cup baby spinach leaves
  • Salt and black pepper to taste

Instructions

  1. Lay the spinach wraps flat on a clean surface.
  2. Spread a generous layer of hummus over each wrap.
  3. Arrange the sliced bell pepper, cucumber, carrot, cabbage, and spinach on top.
