Pat chicken breasts dry with paper towels and season both sides with salt and pepper.
Heat olive oil in a skillet over medium heat. Add chicken and cook for 5 to 6 minutes per side, until golden and cooked through. Remove from skillet and set aside.
In the same skillet, add minced garlic and cook for about 30 seconds, stirring so it doesn’t burn.
Pour in honey, soy sauce, and vinegar. Stir well and let the sauce simmer until slightly thickened, about 2 to 3 minutes.
Add butter, stirring until melted and the sauce turns glossy.
Return chicken breasts to the skillet. Spoon sauce over the top and let them warm through for 2 minutes.
Serve hot, garnished with parsley if you like.
