Heat olive oil in a skillet and brown the beef chunks on all sides.
Place the browned beef and potatoes into the slow cooker.
In a small bowl, mix melted butter, garlic, thyme, rosemary, paprika, salt, and pepper.
Pour the butter mixture over the beef and potatoes, stir to coat evenly.
Cover and cook on low for 6-7 hours or high for 3-4 hours until beef is tender and potatoes are soft.
Garnish with fresh parsley before serving.
