Mix masa harina, salt, and warm water until a soft dough forms. Add a touch of oil to keep it smooth.
Divide dough into 8 equal balls. Flatten each ball into a thick disc, about 1/2 inch thick.
Heat a skillet or griddle over medium heat. Cook each gordita for 2 to 3 minutes per side until lightly browned.
Once cooked, let them cool slightly. Slice open the edge to create a pocket.
Stuff with your favorite fillings and serve warm.
