In a large pot, heat the olive oil over medium heat. Add the sausage and cook until browned, breaking it up as it cooks.
Add onion and cook for about 5 minutes, until soft. Stir in garlic, Italian seasoning, red pepper flakes, salt, and black pepper.
Add tomato paste and stir for a minute to deepen the flavor.
Pour in the crushed tomatoes and broth. Stir to combine.
Bring to a boil, then add the broken lasagna noodles. Reduce heat and simmer for 10-12 minutes, or until the noodles are cooked.
Stir in the cream, mozzarella, and Parmesan. Let it simmer just until the cheese melts into the soup.
Ladle into bowls, top with herbs, and maybe some extra cheese if you're feeling fancy. Eat while hot and cozy.
