Ingredients

  • 3 cups shredded cheddar or Tex-Mex cheese blend
  • 1 ½ cups cooked ground beef or shredded rotisserie chicken
  • 1 cup canned black beans, rinsed and drained
  • ½ cup sliced black olives
  • ½ cup pickled jalapeños (optional, but I highly recommend it!)
  • 1 fresh tomato, diced
  • ¼ cup finely chopped red onion
  • ¼ cup chopped fresh cilantro
  • Sour cream, guacamole, and salsa for serving

Instructions

  1. Preheat your oven to 400°F. Grab a large baking sheet—you’re gonna need the space.
  2. Spread a solid layer of tortilla chips across the sheet. No stacking yet; they all deserve a fair shot at cheese.
  3. Sprinkle half of your cheese over the chips. Yes, we're layering like lasagna.
  4. Add your beef or chicken, beans, olives, and jalapeños. Be generous—it’s not the time to skimp.
  5. Layer on the rest of the cheese. This is the moment everything comes together.
  6. Slide the tray into the oven and bake for 10 to 12 minutes, or until the cheese melts and everything looks golden and irresistible.
