Ingredients

  • 4 thick-cut pork chops
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons olive oil
  • 2 cloves garlic, crushed
  • 1 teaspoon thyme leaves
  • 1 tablespoon butter
  • Splash of apple cider vinegar or lemon juice

Instructions

  1. Pat the pork chops dry with paper towels. Season generously with salt and pepper on both sides.
  2. Heat the olive oil in a large skillet over medium-high heat until hot.
  3. Add the pork chops and sear for about 2–3 minutes on each side until golden brown.
  4. Reduce heat to medium. Add garlic, thyme, and butter to the pan. Tilt the pan slightly and spoon the melted butter over the chops for 1–2 minutes.
  5. Check for doneness—pork should reach an internal temperature of 145°F. Remove from the heat and rest for 5 minutes.
  6. Before serving, splash the pan with vinegar or lemon juice and swirl to create a quick, tangy glaze.
