Ingredients

  • 4 bone-in pork chops
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 4 cups thinly sliced potatoes
  • 1 medium onion, thinly sliced
  • 2 cups shredded cheddar cheese
  • 1 can cream of mushroom soup (10.5 oz)
  • 1 cup milk
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat your oven to 375°F and lightly grease a large baking dish.
  2. Season the pork chops with salt, pepper, garlic powder, onion powder, and paprika.
  3. Heat olive oil in a skillet over medium-high heat and sear the pork chops on both sides until golden brown, about 3 minutes per side.
  4. Layer half of the sliced potatoes and onions in the prepared baking dish. Sprinkle with half of the cheese.
  5. Place the seared pork chops on top of the potato layer.
  6. Mix the cream of mushroom soup and milk together in a bowl, then pour over the pork chops and potatoes.
  7. Add the remaining potatoes, onions, and cheese on top.
  8. Cover with foil and bake for 45 minutes. Remove the foil and bake for an additional 20 minutes until the potatoes are tender and the top is bubbly and golden.
  9. Sprinkle with fresh parsley before serving.
